Bircher


Made this for breakfast for during the week (photo from ninemsn).

High in fibre, antioxidants and EFA's.

INGREDIENTS

2 cups rolled oats
1 cup apple juice
1 cup grated apple
Half a cup natural yoghurt
Juice of half a lemon
1 tablespoon honey


Serve with fresh or dried fruit.

Soak oats, in apple juice. Leave in fridge overnight.

When ready to serve mix through yoghurt, fresh fruit, lemon juice and honey.

Lamb Shanks In Red Wine Sauce


One of our favourite meals are Lamb Shanks in Red Wine Sauce............ Real comfort food.


4 lamb shanks

olive oil

plain flour

salt n pepper

1 brown onion

2 celery stalks

2 carrots

garlic

1 cup red wine

1 bottle passatta sauce







1. Heat oil in frypan. Season flour with salt and cracked pepper. Coat lamb in flour.



2. Cook for 5 to 10 minutes until browned. Remove from pan and set to one side.

3. Dice carrot and celery.



4. Cook onion, carrot, celery and garlic until onion is soft and clear. Remove from pan and set to one side.



5. Increase frypan heat and add red wine. Simmer for a few minutes then add Passatta sauce and onion, carrot, celery and garlic mix. Add lamb shanks.



6. Cover with a lid and reduce the heat to low. Simmer until lamb is tender.



You can also cook this dish in a slow cooker. Brown your shanks and then add everything into the slowcooker and enjoy later that day. Tastes delish no matter how you cook it.



Serve with creamy mashed potatoes and lightly steamed green beans.

Happy Birthday To Me

We had a lovely relaxing weekend. I worked all day Saturday and the girls had a sleep over at a friends on Friday night. Saturday night we went out for dinner at a local pub that has recently reopened and is more a restaurant style than pub. We all got dressed up and I actually wore a dress. First time for a little while. I bought the dress to where for Christmas but it was too cold on Christmas day to wear it.

We had the most amazing meal. For the first time in a long long time we had entree, main and dessert.

J had a lovely Thai Raw Beef salad that was just amazing. I had a Prawn Cocktail (been years since I had one of these). For mains J had the Beef and Reef served with a creamy seafood sauce and I had the Beef Pie with a red wine sauce on a bed of mash and peas. Its was delicious. For dessert the girls and I had a chocolate pudding with a vanilla cream. We waddled out of there at the end of the night.

I received some lovely gifts. J made me a card from my scrapbooking stash ( I was so stunned and love it) and he bought me an organice vegetable gardening book, Kady spent a small fortune from her pay on a lovely bottle of Max Mara perfume. It's so yummy. I received $25 from Mum and Dad that helped pay for my Garden of St Erth membership. Friends bought me a lovely top, a bottle of limoncello lemon liqueur, some hand creams from Innoxa ( a lovely set of four).

Today I had both girls home sick from school. Leah has had an ongoing pain in her tummy for months. She has been on a dairy lactose free diet for the last two weeks with no improvement. As a baby and up until a few years ago she was very intolerant of dairy, lactose.

We went back to the doctor today. Tomorrow they have arranged blood tests and an adominal x-ray. The blood tests are to test for a range of things including if she is gluten intolerant.

Tonight I made the most delicious Seafood Pasta dish.


Lemony Seafood in Saffron Garlic Sauce


1kg Mussells

500 grams green prawns

250 grams pineapple squid

1 cup white wine

1 cup water

1 lemon

pinch of saffron

fettucine pasta

40 grams butter

2 tablespoons olive oil

4 cloves garlic

4 green spring onions, chopped

1 cup cream

2 egg yolks

2 tablespoon lemon juice

2 tablespoons chopped fresh oregano

Scrub mussels, remove beards. Shell and devein prawns, leaving tails intact. Combine mussels, wine and water into frypan. Cover, bring to boil and simmer for 1 minute. Strain and reserve liquid.

Thinly peel rind from lemon ( I use a grater). Combine rind in pan with reserved liquid and saffron, simmer, uncovered until liquid is reduced by half. Strain reserve liquid.

Add pasta to large pan of boiling water, boil, until tender. drain.

Heat butter and oil in pan, add garlic and shallots, cook stirring for 1 minute. Stir in reserved liquid and combined cream and egg yolks, stir, without boiling until slightly thickened.

Stir in seafood, juice and oregano, simmer, covered for about 2 minutes or until prawns are tender. Serve sauce over pasta. Garnish with spring onions.

Sauce can be made the day ahead, not suitable to freeze.

Cake Recipe

Basic Butter Cake Batter

125g (4 1/2 oz) butter

3/4 cup of sugar

1 tsp vanilla extract

2 eggs

2 cups self raising flour

1/2 cup milk


1.Beat the butter and sugar until creamy

2.Add the vanilla and eggs beating well

3.Add the flour and milk and beat well until well combined

4.Pour into a greased / lined tin

5.Cook on 180°C (350°C) for 45 minutes or until a skewer comes out clean

Variations

1.Add cocoa powder (1/4 – 1/2 cup + a little extra milk) for a basic chocolate cake

2.Add cocoa powder and substitute sour cream for the milk (add a little extra to get the right consistency)

3.Stir in about 100g of melted chocolate and 1/4 cup cocoa for a decadent chocolate cake

4.Add cocoa powder and liqueur for an adult cake

5.For (my fav) Black Forest Cake: add 1/2 cup cocoa powder and a teaspoon or 2 of kirsch. Bake as usual and cut the cold cake in half. Whip enough cream with a little kirsch to spread between layers, fold some tinned cherries into the cream, conserving the syrup. Dissolve some sugar in the syrup and more kirsch and drizzle over one layer of cut cake. Spread with cherry cream mix. Top with second cake layer, drizzle remaining syrup. Finish the cake off with plain whipped cream (or sweetened or add more kirsch ) and some grated chocolate.

6.Add a teaspoon or two of instant coffee when you cream the butter and sugar for a coffee cake

7.For mocha cake, add the coffee and substitute the milk for Tia Maria or Kalluha

8.For coffee and sour cream cake substitute the milk with sour cream.

9.For Rum and Raisin cake, substitute the milk with rum and throw in a handful or two of raisins.

10.Add one cup of mashed banana for banana cake

11.Add walnuts or other nuts for a banana nut cake or just a plain nut cake

12.For coconut cake add 1/2 tsp coconut essence, 1/2 cup desiccated coconut, 1 cup of sour cream and about 1/2 cup milk.

13.For lime and coconut cake, substitute the milk for some lime juice and leave out the essence.

14.Substitute sour cream or yoghurt for the milk and add 1/2 cup of lemon juice for lemon and sour cream cake

15.Use the above and add a little lemon zest and 1/2 cup poppy seeds for poppy seed cake

16.For orange cake substitute the milk with 1 cup of orange juice and add the zest of an orange and about 1/2 cup extra self raising flour

17.Substitute the milk with Greek yoghurt and stir in some frozen raspberries for raspberry swirl cake.

18.Or use any other kind of fresh or frozen berry

19.For apple cinnamon cake, substitute the milk with pureed apple and add a teaspoon or two of cinnamon. Or try chopped pear.

20.Or add dried or glace fruit like dried apricots, glace ginger, glace pineapple

21.For a denser cake, add 1/2 cup of ground almonds to any recipe.

22.For a variation, try ground hazelnut.

23.Add some grated carrot, grated zucchini, a handful of pumpkin seeds or some mashed pumpkin. Adjust the taste with spices.

24.For Madeira cake, add 1/2 cup of ground almonds and 2 tsp finely grated lemon or orange zest.

25.Stir in a tsp or two of cinnamon for cinnamon cake

26.Or try ground ginger for ginger cake.

27.Or a combination of spices, cardamom is my favourite.

28.For upside down cake line the base of the cake tin with tinned or fresh fruit such as pineapple or peaches or pears (or berries), sprinkle with brown sugar and pour the batter over the top. Add some of the tinned syrup to the batter for extra flavour


29.Add some honey for honey cake

30.or add maple syrup and substitute brown sugar for the white

31.Substitute the milk with peanut butter

32.Substitute the milk with strawberry jam

33.Add some dates and serve with caramel sauce for an easy sticky date pudding.

34.For a caramel self-saucing pudding, sprinkle the top of the batter with 1/2 cup of brown sugar mixed with a little cornflour and drizzle 1 cup of boiling water over the back of a metal spoon. Bake until cake part is cooked through.

35.For a chocolate self-saucing pudding, sprinkle the top of the chocolate batter with 1/2 cup of brown sugar and 2 tablespoons of cocoa powder, then drizzle 1 cup of boiling water over the back of a metal spoon.

36.Use a cup cake tin instead of a large tin for cup cakes (any variation)

37.Add choc chips

38.For a basic biscuit (cookie) recipe, substitute 1 cup of the self raising flour with 1 cup of plain flour and leave out 1 egg and the milk.

39.Use brown sugar instead of white for a more caramel taste

40.For cake disasters, make a trifle or serve with ice cream.

Happy 15th Birthday Kady

Today my gorgeous girl turns 15.

The last year has been an amazing year of growth for Kady. She has had a few battles to deal with and some things to work through and has done an amazing job learning to handle her anxiety and fears. She has become a much stronger person.

Over the past year Kady has become even more focused on her school work. Her dream was to become a Forensic Scientist in the Police Force but due to her ear/hearing problems she has decided to follow her second love of becoming an Architect. During the school holidays she met the young Architect that works for Jason and has already lined up her work experience with their large company in the city.

The last year also saw Kady move from her black stage to her pastel stage LOL. She still loves her black clothing but wears a greater variety of colours now.

Happy birthday Darl. We love you heaps and are so proud of you.

Kady received her pressies from us last night. It's our tradition with the girls if your birthday is on a school day you get to open your presents the night before. We started this when the girls were little so that Jason got to enjoy watching them open their gifts.

Here are a couple of blurry pics from last night. Kady received the Lord Of The Rings collectors boxed trilogy and clothing including a couple of jumpers, a gorgeous scarf (she needs it as winter has already arrived), a Twilight T-shirt and her favourite a Cry Baby (Johnny Depp) T-shirt.



Tonight we are going out for dinner with Mary, Eddie, Simon, Debbie and her boyfriend Dylan. This weekend all the family are coming over for more birthday celebrations. I have been busy cooking finger food all week. We will have hot finger food, open sandwiches, cheese and fruit platter and of course birthday cake. I will probaby make a couple of pots of different soup for those that stay for dinner.


The open sandwiches I make look similar to the pic above. I usually do salmon with lettuce and capers, beef with lettuce, wholegrain mustard and tomato, chicken and avocado, ham with tomato and chutney, salami with gherkin and tomato, turkey with lettuce and cranberry and a few other varieties as well as some with prawns etc. These are done on diagonally slice french sticks. They look awesome and everyone loves them.
Other news, Jason is working over in Broadmeadows looking after a job now. It means an hour and a 1/4 driving to get there and a little longer coming home.
Leah began her Grandbuddies program at the local hostel with the school. Her Grandbuddy is Marjory and she is 96 years old. Leah loves her. They go once a week to visit. They had to ask their buddies different questions. One of them was about best friends. Marjory told Leah that her best friend had died the week before and they had been best friends for 83 years old (since they were 13) Wow. I just find that amazing. I think it's a fantastic idea for the kids to have a Grandbuddy program.
Leah's school turns 150 years old this year. I am contemplating whether or not to join the commitee.
Kady has a hearing test next week to see how much damage has been done to her hearing since both her eardrums burst in February.
We all have a Karate grading coming up in May. We are all going for our senior red belt.
Last night was our coldest night for a while. It hit zero and we had our first frost of the season. The fire has been burning non stop. I ordered gas at the beginning of the week for the gas heaters as well. I think we are in for a cold winter.

Another Catchup

Mum flew over to the UK last week. She is staying over there visiting all the family for three weeks with her friend Deb. Mum was really surprised when Uncle Mick, Auntie Debs and Auntie Sharon met her at the airport.

Mum and Deb are staying in Brighton in a hotel until tomorrow. Mum said the place is very dirty. Her travel agent booked it for them. It doesn't even have laundry facilities or a phone in their room. Tomorrow they head off to Auntie Linda's to stay for a few days.

Right about now Mum will be enjoying herself at a huge family party Auntie Sharon has organised. I can't wait to see some photos. Really wish we were there too. Some of the relies haven't seen each other for years and years.

So far Mum has caught up with her brothers and sisters, some Uncles, her cousin Julie-Anne and her boyfriend and her Dad and Carole. Sadly her Dad didn't even recognise her and asked her if she was lost when she knocked on his door. Mum has been to the cemetery with her sisters to put flowers on her Mum's grave. She has been gone for 37 years now. I was only little when she died. I would have loved to have known her. She was only my age when she died. So young.

My Auntie Beryl is recovering from her surgery for Breast Cancer. She has to go back tomorrow for another operation as her margins weren't clear when they took her lump out. Thinking of you Auntie Beryl. Will ring you in a few days when you get home from hospital. Keep an eye out for the postie.

My MIL Mary is jetting off to China at the end of her month with her brother and his family. She will have a great time and is really looking forward to it. Mary, Eddie, Wendy, Daryl, Megs, Zac, Cassi and Ash have just returned home from two weeks in sunny Queensland. I think they had as much rain as sun but it sounds like they had a good time.

Last week we had an air conditioner installed. With all the recent hot weather it's really getting a work out. Since going through chemo I always feel so hot. I think it's something to do with all the hormones. Speaking of hormones. I had a bit of a scare last week. A few problems with my good boob. LOL Luckily the doctor thinks everything is ok and it's all hormonal. I have decided to see a breast specialist privately from now on as well as going to the public hospital for my three monthly check ups. Over the last six months I haven't been overly happy at the public hospital. I feel I have become a number now that all my treatment is over and I think I need to be seeing someone other than resident doctors every three months. The last resident I saw wasn't even going to do a breast examination.

Donna had a biopsy on a lump on her shoulder during the week. She is waiting for her results. Chris burnt himself and had skin grafts done on his arms on the same day. Hope you guys are feeling better.


Kady has become very interested over the last six months in studying Forensic Science. Kady's two lower subjects at school are maths and science and she will need to achieve high results in these subjects to achieve her goals. The other week she went and spoke to her class coordinator and organised to have extra tutoring after school for maths. So proud of her. We have told her if she wants to she can achieve anything. Even is she changes her mind career wise later it doesn't matter. As long as she is happy.

I worked all day yesterday. It was so hot and stormy and although there was lots of thunder and a few tiny sun showers we really didn't get any rain. It is really humid at the moment.

I am heading off to work again shortly. Only working four hours today. It is meant to reach 30 degrees again today. Feels like summer is finally here. Mary and Eddie are coming over for a BBQ this afternoon. I am going to make this salad as well as a few others. mmm will have to get some fresh lettuce out of the hot house.


Chickpea, Tomato and Feta Salad
2 x 300g Cans Chickpeas
2 x 250 g punnets cherry or grape tomato
1 small red onion halved and thinly sliced
1.1/2 cups fresh flat leaf parsley
100g reduced fat feta cheese crumbled

Vinaigrette

2 tablespoons red wine vinegar
1 tablespoon olive oil
1 teaspoon Castor sugar

make vinaigrette by combining all ingredients together. Season with salt and pepper. Shake to combine.

Combine chickpeas, tomatoes, onion and parsley in bowl. Dress with vinaigrette. Top with feta. Adjust quantities of chickpeas and tomatoes to suit yourself.


Next week I am doing a Thai cooking class down at the local communtiy centre. I can't wait.
