Out & About



As a family we are trying to make an effort to eat out once a month and try somewhere new each time.

Last week, we were all tired after a busy week so decided to go to a local hotel for dinner. We went to the Courthouse.

Kady had been there before with Nicks family and enjoyed her meal. We weren't disappointed. The meals were lovely and the service was fast and fantastic.

J an I had Stockmans steak, Kady had a beef pie and Leah had bellypork.

Cauliflower/Brocolli Cheese Bake


Ingredients

1 tbs butter
1 cup breadcrumbs (fresh or dried)
2 tbs chopped parsley

1 small cauliflower cut into florets
1 head of brocolli cut into florets
100 grams butter
2/3 cup plain flour
2.5 cups milk (add more if you want a runnier sauce)
2 cups tasty cheese grated (retain some for topping)

Method

1. Preheat ovn to 220C. Melt 1 tbs butter in a small saucepan, Add breadcrums and parsley and mix well. Reserve to one side.

2. Cook cauliflower and brocolli in boiling water until just cooked. Drain and arrange in ovenproof dish.

3. To make the sauce melt butter in a saucepan over high heat. Add flour and stir together for 1 minute. Remove from heat and slowly add the milk, whisking as you add it. Adjust by adding extra milk if you want it runnier. Return to the heat and bring to the boil.

4. Stir in cheese.

5. Pour sauce over cauliflower and brocolli.Sprinkle with breadcrumb mixture and extra cheese. Bake until golden brown.

Butter Chicken

On the menu tonight was Butter Chicken and Tandoori Chicken. Both using recipes from when I did my Indian classes with the local doctors wife.

The tandoori recipe you can view here I make mine without any food colour.

Butter Chicken

Ingredients

(Marinade)

1kg Chicken
2tbs fresh lemon juice
2 tsp tumeric powder
4 tsp chilli powder (according to taste)
4 tsp coriander powder
4 tsp garam marsala
2 tsp garlic paste
2 tsp ginger paste
2 cups natural yoghurt


(sauce)

2tbs oil
120grams unsalted butter
2 tsp cardamon powder
2 cinnamon sticks
4 bay leaves
2 large onions
100 gram cashews (raw or roasted)
6 tbsp tomato puree
4 chicken stock cubes or powder
4 tbs sweet paprika
250 ml thickened cream
fresh coriander leaves


Method

1. Place chicken in a bowl and add all the marinade.  Mix well and refrigerate for a few hours.

2. Reserve half the cashews and place the remaining cashews in a food processer and process until fine.

3. Heat oil and unsalted butter in a pot over medium heat. Add cinnamon and cardamon powder. Cook for a few seconds. Add the onion and bay leaves and cook until onion softens.

4. Add marinated chicken and cook for five minutes. Add cashew powder and chicken stock cubes. Cook until cooked through.

5. Stir in cream, coriander leaves and cashews.

Straw's Lane, Hanging Rock

After our picnic and walk at Hanging Rock we drove a short way to Straw's Lane.

J and I have been here many years ago but we thought it would be fun to take the family and let them try it out.

We started off in Kady's little Festiva first and here are the results. All three cars had a go. Lots of fun. We put the cars in neutral and the rolled up the hill gaining speed the higher up the hill they got.

A true optical illusion. We used a spirit level and the hill is really the opposite to what you think it is. When rolling uphill you are in fact rolling downhill.

We also used a softdrink can to try this out as well.

Deni Ute Muster - Day Two & Three

Although a really wet weekend we still all had a great time. The music lineup was good but it would have been nice to have a little more country. Friday night the lineup included Suzie Quatro, Sunny Cowgirls, Adam Harvey, Beccy Cole, McAlister/Kemp, Tori Darke and Saturday's lineup included Mental as Anything, Icehouse, Eskimo Joe, Guy Sebastian, Adam Brand, Troy Cassar-Daly and Luke Dickens.


All the kids had a ball on this water ride. They had so much fun. Dylan once again enjoyed the duck show.


The Bundy Distillery was really interesting. We taught Dylan how to dial a phone.


The ground dried up a little on Friday before the rain begain again.Thank goodness we all had good waterproof boots. Thankful for our Ariats and Blundstones. Our toes were nice and toasty and dry all weekend.



The kids had a great time in the carnival area. Dodgems, dart balloons, the hurricane (poor Leah was a bit sick after that ride) and Twister. Dylan loved the rides. I thought he would be a little scared but he wanted to go again.

The rain on on Friday night made the bog even boggier.

Mental as Anything, half time during the AFL finals.

Fireworks just before Icehouse came on stage. We enjoyed the music lineup although we weren't too keen on Eskimo Joe or Guy Sebastian. Icehouse were amazing. There laser light show was fantastic. I will share some video's later. It was great catching up with family and friends. Shannan, thanks for stopping by and saying hi. Your guy is cute and he is so lucky to have a girl like you.

The slow trip into Moama. Same as last year although not quite as long. Took 45 odd minutes to travel 4 km's.


Holden Grunt Off

Every year I say I want to take part in the Holden Ute Grunt Off. This year I did. It was so much fun. Our legs were a little wobbley at the end but we did it and we won our heat. We came third overall. 

My niece Courtny (aged 14) took part and did a great job. Well done girls. It was hard work in all that mud.

Deni Ute Muster- Day One

Day One

We arrived early afternoon to set up the site for the muster.

Deniliquin had 40 mls of rain before we arrived and the entire site was flooded. Whilst there we had another 18ml.

On first inspection we wondered how we would set up with so much water everywhere, where we would sleep and if anyone would even bother turnin up to the muster when it was so wet.

After about three metres of sand delivered into the tent and spread out, we were able to lay down tarps to sleep on and set up part of the shop. Utes were moved into place. We dug trenches around the tent to help keep the water well away from the tent.


Kady was the first to slip over in the mud. Poor girl, her boot got stuck and she lost balance. She wasn't impressed to find there was no water in the shower blocks to wash away the mud. We all had a good laugh about it.

Taco Bill's

Family night at Taco Bill's.

J, had the urge to go to Taco Bill's and we were all excited. The last time we went to Taco Bill's was just after I finished my treatment. We ate at the Warrnambool Taco Bill's and it was amazing.

This time however wasn't as nice. Kady and I ordered Fajitta's and they were lovely. Most of the other dishes just looked like slop on a plate. No Taco Bill's for us for a while. It was nice hanging out with Adam and Kath for the evening.

Vic Regional Karate Tournament

This weekend we had the Victorian Regional Karate Tournament. Our Dojo came away with quite a few medals.

Here are a few pictures of Jason fighting. He had a great day and came away with a bronze for Kumite (fighting) and a silver for Kata.
