Tom Kha Soup

3 cups of Coconut Milk
2 cups of water
2 stalks Lemongrass (cut into 1.5 inch pieces and bruise)
4cm Ginger or Galangal (cut into thick slices)
1 fresh coriander root
4 kaffir lime leaves (cut into thin strips)
2 red chillis
2 cloves garlic
2 tablespoons Fish Sauce
2 cubes palm sugar
2 tablespoons lime juice
roasted chilli paste to taste( I used thai red curry as I had no chilli paste at hand)
fresh coriander leaves

1. Place coconut milk and water in a saucepan and bring to the boil over a medium heat.

2. Add galangal, lemon grass, coriander root and lime leaves and simmer.

3. Add fish sauce, chilli and lime juice.

4. Adjust flavours to get the balance of sweet, sour etc

5. Add a selection of vegetable and straw mushrooms. Simmer till cooked.
