After chemo I have a little food obsession. After not wanting to eat for days I crave yummy food.
I love to cook and try different recipes.
Tonight I made (from super food ideas, I really need a subscription to this mag)
Butterflied Prawns With Lime Mayonnaise
(and no we are not rich. lol. green prawns $7.99 a bag in the seafood freezer section at Coles)
750grams green prawns
olive oil
3 slices white bread
1 cup parsley
1/2 cup dill
1/2 cup oregano (all herbs from my vege patch)
Lime mayo
3/4 cup whole egg mayonnaise
1 lime, rind finely grated and juiced
1 clove garlic crushed
3 teaspoons worcestershire sauce
1. Place bread and herbs in food processor. Process till finely chopped (or if you are like me and don't own a food processor, crumble bread till find and chop the heck out of the herbs).
2. Place prawns in a bowl and coat with olive oil. Press prawns into herb mixture and press herbs onto prawn with fingers. Cook on the bbq.
Prepare Lime mayo. Add all ingredients together and season with salt and pepper.
Serve with salad. Dip prawns into lime mayo.
Fresh herbs work best.
I served the prawns with tossed salad and balsamic vinegar and this yummy potato salad.
Horseradish Potato Salad
2kg large red potatoes
1 cup sour cream
1 lemon juiced
2 tablespoons horseradish cream (I made my own from scratch as I only had horseradish)
200 grams snow peas, trimmed and shredded lengthways (freshly picked by Leah from my vege patch)
1/3 cup dill, roughly chopped
1. boil potatoes and allow to cool. chop roughly in large pieces
2. whisk together sour cream, 1/4 cup lemon juice and horseradish cream. Season with salt and pepper
3. Add snow peas and horseradish mixture to potatoes
4. sprinkle with dill.
