We bought some lovely tender steak from our local butcher today. I cooked up a green peppercorn sauce, mashed potatoes, corn and beans to serve with it.
Ingredients
55gram tin of green peppercorn (drained)
1/2 dry sherry or brandy
1 cup thickened cream
1 cup beef stock
2 cloves garlic, finely chopped
splash of worstershire sauce (add more for colour and flavour)
ground black pepper
cornflour
1. Add peppercorns, garlic and dry sherry to a saucepan and bring to the boil.
2. Add beef stock and bring to the boil.Boil for a few minutes to reduce.
3. Add cream and return to the boil. Season with cracked pepper to taste.
4. Thicken as required with a little cornflour.
